FirePit Cookbook: Skewers 3 Ways

Skewers are easy to grill, serve, and eat. And the best part is there are no plates or cutlery to clean up afterwards. Whether you're hitting the backcountry or grilling out in your backyard, these three skewers pair perfectly with the BioLite FirePit (or any of our other grills).

Cilantro-Lime Chicken Kebabs

Equipment used:

  • BioLite FirePit
  • Wooden skewers
  • Plastic bags
  • Cutting board, knife

Ingredients

  • 1 lb Chicken Breast
  • 2 Garlic Cloves, Minced
  • 1/2 Cup Cilantro, Chopped
  • 1/4 Cup Lime Juice
  • 1 Additional Lime
  • 1/2 Cup Honey
  • 2 Tbsp Soy Sauce
  • 1 Tbsp Olive Oil
  • 1/2 tsp Salt
  • 1/4 tsp Pepper

At Home Prep

  • Combine garlic, cilantro, lime juice, honey, soy sauce, olive oil, salt and pepper in a large plastic bag.
  • Cut the chicken into 1'' cubes.
  • Add chicken into plastic bag and mix around until it is coated with the marinade. Allow the chicken to marinate for a couple of hours or even better, overnight.
  • Soak the wooden skewers in water to prevent them from burning.
  • Assemble the skewers by placing a few cubes of chicken onto each skewer. Pack in a tray or doubled up plastic bag with a few lime wedges in a separate bag.

Off-Grid Prep

  • With your FirePit's fuel rack at the highest level, pour a bed of easy light charcoals into the FirePit and light.
  • Once your FirePit is hot, place your skewers on the grilling, flipping as needed.
  • Remove from the grill once fully cooked and dress with extra lime. 

Korean BBQ Kebabs

Ingredients

  • 1 lb of Chicken Breast
  • 2 Bell Peppers
  • 2 Garlic Cloves, Minced
  •  1 Onion
  • 6 Green Onions, Diced
  • 1/3 Cup Sesame Oil
  • 1 Cup Soy Sauce
  • 2 Tbsp Rice Vinegar 
  • 4 tsp Dried Ground Ginger
  • 1/4 Cup Honey
  • 4 tsp Pepper

At Home Preparation

  • Combine garlic, sesame oil, soy sauce, rice vinegar, ground ginger, honey, black pepper, and green onions in a large plastic bag.
  • Cut the chicken breast into 1'' cubes and add into the marinade bag, mixing the bag around to coat the chicken. Seal the bag and allow the chicken to marinate for a couple of hours or even better, overnight.
  • Cut the bell pepper and onions into chunky pieces and set aside.
  • Soak the wooden skewers so they don't burn on the grill.
  • Assemble the skewers by alternating chicken, pepper, onion, until the skewer is full.

Off-Grid Prep

  • With your FirePit's fuel rack at the highest level, pour a bed of easy light charcoals into the FirePit and light.
  • Once your FirePit is hot, place your skewers on the grilling, flipping as needed.
  • Remove from the grill and enjoy.

Dessert Skewer

Ingredients

  • Balsamic Vinegar
  • Olive Oil
  • Green Grapes
  • Strawberries
  • Mini Glazed Donuts (we'd recommend using donut holes for best results).

At Home Prep

  • Clean all fruit and chop the tops off of the strawberries.
  • In a mixing bowl combine the grapes and strawberries and drizzle with olive oil and balsamic vinegar. 
  • Soak skewers in water to prevent them from burning on the grill.
  • Assemble the skewers by alternating grape, strawberry and donut until the skewer is full.
