Think Outside The Box With Three New Fruit & Veggie Recipes for Your FirePit

 At BioLite, when we find a recipe with a limited amount of ingredients that can be grilled up quickly - we call it a quick hit. Each of the recipes in the video below is just that - a surprisingly satisfying dish that is sure to be a hit at your new BBQ or backcountry meal. Grilled Romaine Salad

Equipment Used
  • BioLite FirePit
  • Charcoal
  • Cutting board, knife
  • Mixing bowl, spoon, whisk
  • Tongs
Ingredients
  • 1/2 Cup Olive Oil
  • 2 Tbsp Apple Cider Vinegar
  • 2 tsp Dijon Mustard
  • 2 tsp Mayo
  • 1 Clove Minced Garlic
  • 1-2 Heads of Romaine Lettuce
  • Parmesan
  • Salt & Pepper
At Home Prep
  • Prepare the dressing by whisking together olive oil, apple cider vinegar, mustard, mayo and garlic. Set aside.
  • Prepare the lettuce by slicing it in half and removing the bottom.
Off Grid Prep
  • With your FirePit's fuel rack at the highest level, pour a bed of easy light charcoals into the FirePit and light.
  • Once your FirePit is hot, place the lettuce onto the grill and cook for about 30 seconds on each side.
  • Remove from grill, drizzle dressing and sprinkle parmesan.

 

Grilled Grapefruit with Mint & Honey (serves 2-3)

Ingredients

  • 2 Grapefruits
  • 2 Tbsp Fresh Mint Leaves
  • 2 Tbsp Honey

At Home Prep

  • To prepare the dressing, combine 1/2 grapefruit (juiced), honey and fresh mint. 
  • Slice the other grapefruit in half.

Off Grid Prep

  • With your FirePit's fuel rack at the highest level, pour a bed of easy light charcoals into the FirePit and light.
  • Once your FirePit is hot, place the grapefruit halves onto the grill and cook for about one minute.
  • Remove from grill and drizzle with the sweet dressing.

 

Grilled Fennel

Ingredients

  • 1 Tbsp Olive Oil
  • Juice from 1/2 an Orange
  • Large Fennel
  • Salt & Pepper

At Home Prep

  • For the dressing combine olive oil, orange juice and salt. Set aside. 
  • Remove the bottom and green tops of the fennel. Slice the fennel into 8 pieces as you'll see in the video above. 
  • Place fennel in a large mixing bowl, drizzle with olive oil, salt & pepper and set aside. 

Off Grid Prep

  • With your FirePit's fuel rack at the highest level, pour a bed of easy light charcoals into the FirePit and light.
  • Once your FirePit is hot, place the fennel pieces directly onto the grill. Turn the pieces every 4-5 minutes and grill for a total of about 20 minutes.
  • Remove from the grill, drizzle with dressing and enjoy.
